Tasting Notes

The grapes are hand-harvested in 5 kg crates, carefully selected, and left to rest for 15 days in ventilated rooms to achieve optimal ripening. After destemming and crushing, maceration lasts for 9 days, with punch-downs and pump-overs to enhance color and structure. The wine is aged in stainless steel tanks, on fine lees in suspension, with spontaneous malolactic fermentation to preserve its distinctive character.

The wine shows a ruby color tending towards garnet. On the nose, it offers pleasant aromas of morello cherry and small forest fruits. On the palate, it is dry, well-structured, fresh, with a slight bitter aftertaste. It pairs well with game dishes, including small game, red meats, and aged cheeses.

"Almost Forgotten"

An ancient native grape from the hills of Breganze, almost forgotten over time and brought back to life thanks to the passion and dedication of the Miotti family. This exclusive wine, produced in limited quantities, symbolizes a rediscovered tradition, a key piece of Breganze’s winemaking history. It is said that Firmino’s father, sensing the end was near, entrusted him with a special legacy: "My son, I leave you no riches, but a hidden treasure. At the bottom of the field, you will find three ancient vines, called 'cruvaie'. No one picks those bunches because they seem unripe and overlooked. But you gather them, press them: that wine will be your fortune."

Thus Gruajo was born, a wine with a unique profile, rich in contrasts and nuances, with a taste that blends the sweetness of ripeness with the freshness of its distinctive acidity. Historically considered a "capricious" grape due to the uneven ripening of the clusters, with some berries ripe and others still green, Gruajo nearly disappeared, but Firmino Miotti was able to interpret its potential, restoring it to the place of honor it deserves.

Today, every bottle of Gruajo tells a story of resilience and love for the land, a bridge between past and present that invites rediscovery of the authentic flavors of a unique territory. Its complex and multifaceted character captivates the palate of connoisseurs, making this wine not only a product to taste but an experience to live, a symbol of a winemaking heritage to be cherished.
