Valletta was the name used in the last century by local inhabitants to define the area around Colle di Santa Lucia, flanked by two small valleys that still converge near the center of Breganze. The Merlot and Cabernet Sauvignon grapes are harvested and vinified separately. All grapes are carefully selected in the vineyard by experienced pickers, hand-harvested, and left in crates for 10–15 days to allow a slight evaporation of water from the berries, naturally concentrating sugars and aromas. The grapes are then completely destemmed and macerated for 13 days with frequent punch-downs and pump-overs. The wine is aged in small new Allier French oak barrels for about 22 months. After this maturation, it undergoes no stabilization or filtration and remains in the bottle for at least 8 years before being sold.
