Authentic expression of Vespaiola in the Classic Method Dosage Zero version. Its aromas develop with elegance, maintaining freshness and great drinkability. The grapes, carefully selected during harvest, are collected in 10 kg crates to preserve their integrity. After gentle pressing, the must ferments at a controlled temperature of 18°C and ages in steel until the tirage stage, followed by bottle fermentation with lees aging for 36–48 months, up to disgorgement. No liqueur is added, for a pure and authentic Dosage Zero.

Anima is the expression of the Breganze territory; it is the soul of Vespaiola, the quintessential native variety of Breganze DOC. Aromas of Mediterranean herbs, candied citrus, and apple fruitiness. Dry, full, mineral, and slightly acidic taste, with good aromatic persistence. Pairs well with fish appetizers (swordfish carpaccio or others), even raw (oysters), shellfish in general, creamed cod, fried fish, and vegetables.
Historical Notes
DOC Breganze
Viticulture in the Vicenza area has roots dating back to ancient times. Fossilized grapevine remains found in Salcedo testify to the presence of vines since the Tertiary era.
A key moment for local viticulture occurred at the end of the 13th century, when the Codice Vineale of Bassano established strict rules for wine production and trade. Vespaiola is a historic grape variety, cherished by the Venetians and already praised in 1610 by Andrea Scotto for its quality.
Its name comes from the attraction that the sweet grape juice has for wasps. After difficult periods, including phylloxera and the World Wars, the revival of viticulture culminated in 1969 with the recognition of the Breganze DOC, which protects this iconic local wine.
