Tasting Notes

Pedevenda is an extremely rare grape from the Vicenza area, cultivated almost exclusively by Cantina Firmino Miotti for over a century. It is a vigorous variety with steady yields. Harvesting is done by hand, carefully selecting the grapes and placing them in 10 kg crates. The grapes undergo gentle pressing, followed by fermentation at a controlled temperature of 18 °C. The wine completes part of its fermentation directly in the bottle, using the traditional "sur lie" method, which gives it a natural sparkle. For this reason, a slight sediment may be visible at the bottom of the bottle. This wine contains absolutely no added sulfites: none are used on the grapes, during fermentation, or before bottling.

This wine carries aromas of fresh fruit, light and highly drinkable. Its bright acidity, supported by a gentle sparkle, makes it lively and enjoyable. It pairs well with fried fish. It can be served either cloudy, by gently shaking the bottle before pouring, or clear, by slowly decanting to separate the wine from its sediments.

Pedevenda

The rarest grape of the Vicenza area

Pedevenda is an extremely rare grape from the Vicenza area, cultivated almost exclusively by our winery for over a century. It is a vigorous vine with consistent yields.

The cluster is medium-sized, with a greenish-yellow skin. It ripens late and thrives in hilly clay-limestone soils, showing good resistance to cold and diseases while maintaining a solid acidity even in the hottest years.

In an interesting 1754 publication by Aureliano Acanti, Pedevenda is mentioned several times as the “pleasant Pedevenda”… “it is a drink of paradise: this rare Pedevenda is marvelous and enchanting.”
