The sweet wine made from dried grapes that represents the flagship of our production. Firmino Miotti’s Torcolato is produced exclusively from Vespaiola grapes grown on the volcanic hills of Santa Lucia in Breganze. It is obtained from a careful selection of grape clusters, which are twisted (intorcolà) on strings in a well-ventilated environment to dry. Only the best, most loosely packed clusters are harvested for this drying process.

Historical Notes
DOC Breganze
Vespaiola is an ancient native grape variety, already praised in 1610 by Andrea Scotto for its quality. Its name comes from the sweetness of its juice, so irresistible that it attracts wasps. After centuries of challenges, including phylloxera and wars, the DOC Breganze recognition arrived in 1969, protecting this iconic wine of the region.
Firmino Miotti’s Torcolato is made exclusively from Vespaiola grapes grown on the volcanic hills of Santa Lucia in Breganze. The healthiest and most loosely packed clusters are hand-picked and left to dry, suspended and twisted (intorcolà) on strings in well-ventilated environments. After Christmas, the concentrated and fragrant grapes are vinified through a slow fermentation that can last months, stopping naturally to preserve the must’s natural sweetness.
The wine then ages for years in steel tanks, developing a rich profile: golden color, intense aromas of honey, baked apple, apricot, dates, raisins, and dried fruit. On the palate it is full-bodied, soft, and long, yet always balanced thanks to the fresh acidity of Vespaiola, which counteracts the sweetness and gives it elegance without being cloying.
A true meditation wine, Torcolato is best enjoyed on its own but pairs wonderfully with blue cheeses, dry pastries, and small desserts. Its remarkable aging potential makes it ideal for special occasions: each bottle, even after decades, remains a delightful discovery.
