What does native grape variety mean?

How is Breganze Torcolato produced?
Torcolato is produced from Vespaiola grapes that are harvested by hand and left to dry naturally in the attics until January. After pressing, a slow fermentation and a long aging process follow.
What is Torcolato?
Torcolato is the iconic sweet passito wine of Breganze DOC. It is made from dried Vespaiola grapes and stands out for its balanced sweetness, freshness, and great aging capacity.
What is the difference between Torcolato and Vespaiolo?
Vespaiolo is a dry white wine made from fresh Vespaiola grapes. Torcolato, on the other hand, comes from dried Vespaiola grapes and is a sweet passito dessert wine.
What does wine col fondo or “Sur Lie” mean?
Wine 'col fondo' is a wine naturally refermented in the bottle. The yeasts remain at the bottom, imparting aromatic complexity, freshness, and light notes of bread crust.
Should 'col fondo' wines be shaken before serving?
It depends on personal preference. Pouring it gently and leaving the sediment at the bottom results in a clearer and more delicate wine. On the other hand, lightly shaking the bottle before serving will fully express the yeasts, delivering a cloudy wine with a much more intense and structured flavor.
What is a Metodo Classico Dosaggio Zero?
It is a sparkling wine produced through second fermentation in the bottle with no sugar added after disgorgement. The result is a very dry, mineral, and elegant sparkling wine.
How is the Metodo Classico “Anima” born?
“Anima” is born from hand-selected Vespaiola grapes. After the initial fermentation, the wine referments in the bottle and ages on the lees for over 36 months, developing complexity, freshness, and extreme finesse.

Spring and autumn are ideal for being enchanted by the wonderful colors of the vineyards, while summer is perfect for enjoying the sound of cicadas and relaxing in the cool of the cellar.
